Jackson Jumping In With Princeton’s SNAP Education


Having recently joined the Caldwell County Extension Office, Robin Jackson is the new Nutrition Education Program SNAP Education assistant from the University of Kentucky.

Her job: to provide a number of lesson plans, leading to better nutrition for a better “you.”

She tells WPKY and Your News Edge that she’s looking forward to an upcoming visit at the Caldwell County Senior Citizens Center located at 200 N. Eagle Street.
It’s a group she first met in early June, following the start of this area nutrition class.

These lesson plans, she said, come in wide variety.

Furthermore, these lessons aren’t just designed for senior citizens. Jackson has plans for all ages.

Meal planning, she attests, is the biggest key to providing the perfect, balanced menu.
